GRAPE: a blend of Kangun 50%; Alligoté 25% and Chénin 25%
HARVEST DATE: Mid- September
CLIMATE: Continental climate. Vineyards are situated at an altitude of 1000 meters above sea level.
VITICULTURAL FACTS: Average of 6 tons / hectare of grapes production.
WINEMAKING: Hand harvested in small boxes. Strict sorting on a selection table at the grapes reception. 12 hours cold settling. Three weeks alcoholic fermentation with temperature between 14 to 16C in stainless steel tank.
AGEING: 8 months in French oak barrels.
TASTING NOTES: Nice blend of grape varieties that we are not accustomed to seeing live together. A crystal clear wine with hints of pink and white berries. Well done, delicious and crunchy with biting finish.
EXAMPLES OF SIDE DISHES: Chicken with creole, trout with almonds, salmon steak.
IDEAL TEMPERATURE: Serve at 8°C
